Plum Lemon Popsicles

These homemade popsicles are super easy and SO yummy! Perfect for these hot and humid Arkansas afternoons.
-Makes 4
All you need is:
  • 1 Plumcot (a plum and apricot hybrid from Sam's Club- super sweet and less sour than a regular plum!
  • 1 Large Orange
  • Lemonade- I used crystal light lemonade because it is sugar free and calorie free!
  • Popsicle mold- mine are from Wal-Mart and they catch the melting pop and you can drink it out with the straw on the side. How smart!!
How to make:
  • Cut up orange into small pieces, about 1/2 in
  • Cut plumcot into smaller pieces
  • Pour lemonade into the molds about half way
  • Put the orange and plumcot pieces into a zip-loc, close, and smash until most juices are out
  • Spoon in the mix into the molds and freeze over night

Sunday Favorite - Strawberry Pancakes

Basically these are the easiest pancakes ever to make! I always love having pancakes on Sunday mornings before church, but this morning I decided to switch it up a bit. Plus without using syrup, they are little bit healthier!
This recipe made four medium sized pancakes.
Here's what you will need:
  • ​6 Fresh Stawberries
  • Reddi Wip
  • Dark Chocolate- 1 Dove square is plenty
  • Your choice of pancake mix​- I used Aunt Jemima Original Complete
  • Ground Cinnamon 1/4 teaspoon
  • 1/2 teaspoon of ground flax seed
How to make:
  • Wash and cut up strawberries into fourths (depending on how big they are or how you like them)
  • Take 1/2 of the cut up strawberries and mush them into smaller bits.
  • Stir up the pancake mix as usual
  • Add in the strawberries and stir
  • Add and stir the cinnamon and flax in
  • Once on the pan, they will take a little bit longer to cook because they are thicker
  • Let the pancakes cool in the fridge for 10 minutes
  • Squirt a little bit of Reddi Wip in between each pancake to add extra moisture
  • Then top with Reddi Wip, the rest of the strawberries.
  • For the chocolate garnish, I shaved up the chocolate piece and sprinkled it on top.
